    if I’m trying to make prosciutto or a country ham can I use or need to use
    t-spk starter culture or not..and what the benefits using it.
    but I don’t have no drying chamber with
    any controls just a refrigerator that on refrigerator setting .
    do I need to cure ham out of refrigerator or do in refrigerator when curing.
    thank you for any help

      Willie, sorry for missing this comment and my delay in response. For these hams, they were traditionally cured in the coolest places available. The starter cultures are not as important as just having the proper amount of salt throughout. Once you have the salt in, you can rotate in and out of the fridge as needed.
